PORK CHOPS CACCIATORE

 

SUPPLIES FOR 5 SCOUTS

  • Boneless Pork Chops . 5 (approx. 1 pound)
  • Red Potatoes. . . . . 4 medium size
  • Tomato Sauce. . . . . 1 can (15 oz)
  • Whole Tomatoes. . . . 1 can (15 oz)
  • Cooking Oil . . . . . 1/3 cup
  • Brown Sugar . . . . . 1 tablespoon
  • Salt. . . . . . . . . 1/2 teaspoon
  • Black Pepper. . . . . 1/4 teaspoon

PROCEDURE at camp

20 minutes before dinner
  • Start fire
1 hour 20 minutes before dinner
  • Place oil and pork chops in Dutch oven
  • Deep fry (sizzle) for 5 minutes on each side
  • Cut potatoes in quarters (do not peel)
1 hour before dinner
  • Spoon the liquid out the Dutch oven
  • Pour tomatoes and tomatoe sauce over chops
  • Add potatoes, brown sugar, salt, and pepper
  • Cover Dutch oven, simmer, and stir often for 60 minutes
  • If too thick, add water while cooking
10 minutes before dinner
  • Uncover and simmer for 10 minutes to thicken
